Noma, Copenhagen, Denmark: Still holding on tight to the top spot, which it won last year, Noma is known for its innovative, inventive and, of course, ground-breaking approach to cooking. What we like is that the restaurant, has taken the tired old concept of the amuse bouche (single, bite-sized hors d'œuvre) and turned it into a dazzling array of one-bite starters that are alone worth the air fare to Denmark. Through the use of innovative cooking methods, Rene Redzepi's restaurant, housed in a former warehouse in Copenhagen's dockside area, has changed diners' perceptions of Nordic cuisine.
